Healthy French Toast Recipe

I know french toast is pretty easy to cook, but my mother taught me this 
recipe when I was in junior high and it's been a staple ever since. If a 
12 year old can do this, so can you. It's quick, easy, and impressive as
long as you don't tell people how easy it is.

* whole grain bread - generally 2 slices per person

* eggs, egg whites or egg substitute 

Lightly beat a few eggs in a shallow dish. You can use egg substitute or 
just egg whites if you're concerned about the fat, but don't discount 
the other health benefits of egg yolks. I often do three egg whites and 
one egg yolk for three slices of bread.

Heat a nonstick skillet and spray lightly with a cooking spray. When the 
pan is hot, but not smoking, dip a slice of bread in the egg mixture. 
Flip once to coat with egg. Set it in the pan carefully. Some bread 
falls apart really easily, but usually a good whole grain bread will 
hold up well.

Repeat with as many slices of bread as will fit in your pan. When the 
egg on the bottom is set and golden brown, flip the bread over. When 
it's golden brown on the second side, remove and eat.

Viola - quick, easy and healthy french toast. Top with apples slices, 
fresh berries or anything else that suits your fancy.
