How to trim fat without losing muscle

I'm in my 4th month of hard lifting and have seen measurable gains in all areas. At this point I want to keep the mass but trim the fat. I'm 6 foot, 195 and ideally want to be around 185. I'm taking Whey protein, and another suplement for workout energy. I lift 6x a week, around 2.5 hrs a day, which includes 1 hour of hard cardio. Will the Protein (44g) keep the muscle mass if I begin to cut back on calories? It's a tough mix but I don't want to decrease in size. I've also heard that you can actually eat muscle if not done properly. Any ideas?
