Which Fat To Eat, Which Fat To Leave Behind?

Fat on meat can be really good or really bad for you.  The question is, which fat to eat and which to leave?

Only eat the fat on meats that were grass fed and pasture raised

Commercially raised animals are rather unhealthy.  Beef cows for example are ruminant animals that have 4 stomachs.  They're only supposed to eat grass.  Once they chew on the grass and swallow it, the chyme goes through each stomach one after the other.  In each stomach there are different processes to extract the protein, fats, carbohydrates and other nutrients from the grass.

Each stomach has different bacteria in it which perform different chemical processes.  That's the natural digestion of the cow.

I chuckle at restaurants when they tout their "grain fed" beef as if that was a good thing.  Feeding cows grain is like poisoning them.  The grain has too much protein for what the cow's stomachs can handle.  What happens is the excess protein creates an acidic environment in the cows stomachs, causing an imbalance between good and bad bacteria.  The bad bacteria thrive and the good ones die.  This makes the cow sicker and sicker and it also fattens it up quicker which is one of the main reason it's done since beef is sold by the pound.  The heavier it is, the more its worth.  Some farmers will claim that their beef is grass fed but "grain finished".  Which means they only poisoned their cow for the last 6 or so weeks of their life.  It still changes the balance of the cow and "ruins" the nutrient profile of the meat.

On top of that, we've been conditioned to prize marbled steaks.  The bad news is, fat is where animals store toxins.  It's a sort of buffer to keep the toxins away from vital organs and form entering the blood stream easily and clogging up the liver.

Back to today's tip.  The fat (or suet as it's called) in grass fed beef is FULL of fantastic nutrients.  It's definitely the fat to eat.  The downside is, grass fed beef has little fat compared to grain fed meat.  The fat from grain fed beef on the other hand has reduced quantity and quality nutrients and increased quantities of toxins that the cow's system put aside to deal with later.  That's the fat to leave. Unfortunately, if you eat it, your liver will have to deal with them.

The short version is: the fat to eat is from grass fed beef, enjoy all you can and trim the fat off grain fed beef because that's the fat to leave.
